Color me Carrot!

Often undervalued,carrots are very versatile and can be used for savory or sweet recipes.They're low in calories,a good source fiber and are packed with vitamins (A,C,K AND THE B group.)

Here we have a tasty recipe that can have several use and it's very easy to make.

You will need :

5-6 medium size carrots

ground black pepper

3 Tbls Vegenaise (Soy Free)

1/2 cup of Cashews

2 Tbls Extra Virgin Olive Oil

1/2 Cup Unsweetened Almond Milk

1 teaspoon Chili Pepper Flakes

2 Cloves Roasted Garlic

A pinch of salt


Start by washing the carrots and cut them in two lengtht-wise. Pre heat the oven to 350 .Place the carrots on a baking sheet and sprinkle with pepper,salt and olive oil .Bake for about 10-15 minutes or until tender.

Chop the garlic into small pieces and roast for 2-3 minutes.

Blend the carrots,garlic,vegenaise and almond milk.Add the chili flakes and cashews and blend until even.


You can serve it cold or warm as a dip,spread or as pasta sauce!
